Mugwort Lollipops
These little dream pops are intensely delicious. You can substitute any number of herbs for the mugwort, including rose petals, calendula petals, chamomile, rosemary, or peppermint.
2 cups sugar (coconut or whole cane sugar is great; I tried hard to make a sugar-free candy that didn’t suck & was unfortunately left empty-handed)
2/3 cups water (I started this process by using herbal tea but quickly found that it ultimately tastes nothing like the herb by the end of cooking)
1/4 teaspoon salt
1 cup very concentrated tea, simmered down to a light dusting on the pan; alternatively, you can simmer down the tea and dehydrate it the rest of the way to 100% avoid scorching the herbs. Mugwort is great here, as are teas of herbs that you want to use to serve specific purposes, like chamomile or nettle (!) or horehound or mullein.

Sugar turns to hard-crack stage beginning around 295F, at which point sugar simultaneously caramelizes, creating a dark, musty, and deep flavor profile. At this temperature, many of the medicinal virtues of herbal teas are cooked off and little remains. To make a candy maximally infused with herbal goodness, I make a very concentrated tea and simmer it down till ALL of the liquid has JUST evaporated. Note that as it simmers to nothingness, it approaches burning, so I turn off the flame and let it evaporate without risk of scorching the remaining herbal constituents in the pot. I pour the just-caramelized sugar/salt into this pot and stir well before pouring into lollypop molds.
In a medium pot, combine the sugar, water, and salt. Stir well. With a candy thermometer constantly measuring the temp, bring this mixture to 290-295F. A light burning smell will happen but that's ok, so long as it doesn't get too hot. Once the water is totally evaporated, the mixture's temperature will rise swiftly, so make sure to monitor it more closely at this point. Once it's at 290F, add, turn off the heat and stir till it in to the pot with the dehydrated herbal tea. Stir well and pour into candy molds. Decorate with plant parts for cuteness effect.
Some potential cute lolly-handles include bamboo, rosemary, lavender (a few, these tend to be on the weak side)... etc, just make sure it's non-toxic, dur. Let cool at room temperature and enjoy! Can be stored in an air tight container at room temperature for quite some time. I wrapped them in parchment paper and string and they were quite cute.
